Low Fat Scones

 Philomena’s Zero Fat Scones

Perfect for anyone with a diet with a bit of a sweet tooth!


Ingredients
1 lb/454g flour
2 tsp baking powder
2-3 oz/60g castor sugar
2 eggs
Buttermilk
1/2 tsp vanilla essence
pinch of salt (optional)
Method
Turn out onto a lightly floured surface
Bring the mixture into a ball and roll out to approximately 1 inch/2.5 cm thick
Cut the mixture into circle shapes Tip! Dip the cutter into flour before each scone is cut
Place the scones on a lined baking tray and brush the tops with the remaining egg mixture.
Bake for 10-15 minutes or until golden brown.
Experiment! Alternatively take out 25g flour and replace with 25g ground almonds and 1-2 tsp of ground cinnamon for Almond scones. Add mixed Fruit/ nuts etc
